It's Zucchini Time!

I know there are a lot of jokes about zucchini left on porches and in cars by the bagsful. But it's one of my summertime pleasures. I refuse to buy it in the store in winter, but I'll eat it as fast as I can in the summer.

Here's one of my favorite ways to eat it...

Zucchini Patties

3 cups grated zucchini
2 eggs, beaten
1-1/3 cups Bisquick type baking mix
1/2 cup chopped onion
Lawry's seasoned salt, to taste
1 cup shredded cheddar cheese
bacon bits (optional)

Stir ingredients together; don't overmix. Drop by tablespoonsful onto hot, oiled skillet. Flip. Best served hot.

  1. I love zucchini too (although we call them courgettes) and I am awaiting my first one from the two courgette plants that survived the June floods.

  3. Thanks for sharing this recipe Lona! I love different ways to fix zucchini, and the plants in our garden (that were planted just last month) are nearing bearing time. Is it possible to have too much zucchini?

Haying 101

A few posts back, "deep end of the loom" (love that name!) asked me to tell a bit more about the haying process. If you want my version, read on. If you'd like to read the official wikipedia version, click here . Haying happens in three steps: cutting, raking and baling. This process takes several days, as the hay must be dry when baled. Moist hay molds and heats up and has even been known to spontaneously combust, burning down the barn. Gotta have dry hay. This first photo is of our haybine. The haybine not only cuts the hay, it also crimps each piece of long grass in several places, to allow for faster drying. We usually cut hay in the early afternoon, when the dew is gone. When we're done, long row of cut grass lie waiting. The hay is allowed to dry for two to three days, depending on wind and sun conditions.
